Chef Alessandro Proietti Refrigeri lands in Oltrepò after significant and important experiences. Romano, born in 1988, after spending two seasons in Salina as Riccardo Di Giacinto's sous chef, at the time of his consultancy at the Capofaro Resort, he moved to Copenhagen at Noma working for two years alongside Renè Redzepi from 2012 to 2014.
After the experience in Denmark he returned to Italy at Heinz Beck's Pergola where he stayed for two years before becoming coordinator of all the Berberè clubs together with the Aloe brothers.
